Extra Virgin Olive Oil is produced from estate grown Italian olive
varietals. The olive orchard is planted with 50% Leccino, 33% Coratina,
10% Frantoio and 7% Pendolino olive trees. This combination of varietals
produces olive oil that is fruity with a peppery finish.

The proprietors planted
Italian varietals because of the climate and soil conditions of the Paso
Robles area. Olive trees are native to areas with hot, dry summers and
mild, wet winters and prefer alkaline soil conditions, growing particularly
well in limestone soils where the water is retained deeply.
To produce our extra virgin
olive oil, the olives are hand picked at the optimum time in late fall and
are a mixture of ripe (black) to un-ripe (green) olives. The harvested
fruit is taken on the same day to a local mill and cold-pressed. Hand harvesting of the fruit and immediately
pressing enhances the flavors of the oil and
maintains its healthful benefits.
The oil is directly
transferred after pressing to closed containers and stored in a controlled
environment until bottling. The olive oil is bottled in
amber tinted glass containers to minimize the detrimental effects of
oxidization that light can promote.
Olive oil’s therapeutic
properties have been found to prevent cardio vascular disease and retard the
signs of aging. Olive oil is rich in oleic acid, which makes it high on the
list of monounsaturated fats. Monounsaturated fats are beneficial in
reducing LDL while increasing HDL, therefore reducing cholesterol levels in
the body. Olive oil is highly beneficial whatever your age or life style.
